Cupboard List


The Incomplete List and Last Night's Dinner
6 cans of salmon
15 cans of tuna
2 chuck eye steaks
2 pork steaks
4 lbs of assorted pork chops
1 whole chicken
5 pounds of chicken breast
2 pounds of chicken breast
1 lb of hamburger meat
1 large salmon fillet
2 pounds of stew meat
2 ham hocks
3 slices of bacon

Beans

3 pounds of pintos
2 pounds of red
2 pounds of white
2 pounds of soup mix
2 pounds of black
1 pound of chickpeas
1 pound of lentils
1 pound of green peas
Oatmeal
5 pounds of rice
10 pounds of potatoes

30 pounds of flour

5 pounds of white sugar(sweet tea)
1 pound of raw sugar
1 1/4 pounds of honey
1 small bottle of molasses
1 small bottle of maple syrup


6 pounds of butter
1 pound of homemade honey butter

1 1/2 pounds of sharp cheddar
6 packages of sliced chese.....Sharp Cheddar, Mild Cheddar, Swiss, Smoked Swiss, Montery Jack, Pepper Jack.
1/4 package of good parmesan
1 bottle of not so great parmesan

1/2 container of sour cream
1/4 container of heavy cream
1/2 gallon of milk

4 cans of tomatoes
3 cans of tomato paste
several random canned vegetables
soups, and beans.

Vegetables

Lots of zucchini
Hopeful tomatoes
peppers galore
3 heads of garlic
1 1/2 sweet onions
7 green onions
1/2 red onion
3 pounds of carrots
frozen spinach
5 ears of corn

Tortillas
crackers
Corn chips
 
This is most of it. I think. It sounds like it could feed an Army for two weeks. So why am I always trying to figure out what's for dinner?

 
Last night.....
 
We had half a steak left from a couple of nights ago so I took it and sliced it thin. 
Tossed that with 1/4 a sweet onion and some cumin, chili powder, and red pepper. I also put a bit of beef stock in to help it stay moist and hold together. I really just warmed it through.
I took a can of refried beans and added a few spoonfuls of the awesome hot sauce I made last week.
I grated a bit of cheddar. 

Then I made quesadillas. 
A nice smear of beans, a layer of steak and onions, and a bit of cheese.
Thrown into the skillet and crisped on both sides.
I also took two tortillas and made chips for Scott. He's allergic to corn. 
Cut them up, and threw them into a 400 degree oven for about 3 minutes on each side. I sprayed the pan with oil and sprinkled salt down and then sprayed the top lightly and salted it too. Maybe not as healthy as it could get, but at least Scott got to eat chips...lol.

They were so filling that none of us managed to eat more than one. 

Now I'm still wondering what I'm fixing for supper....lol.

It is hard to believe that we have all that stuff in the cupboard.
And the stuff you come up with to make is awesome .
The chips you made for me were out of this world good.

You have inspired me to list off my cupboard contents (I won't list it here) - it looks like I will not be shopping much in the next couple weeks so we can use most of this food up in the freezer before it freezer burns. Thanks for that.

One thing I have an abundance of is rhubarb - all from this spring and all for making rhubarb wine. (about 30 lbs.) Once I get that out of my freezers they will almost be half empty. Yay!
