Also because I just recently made ginger beer as well. It is just soda pop but called ginger beer. I had a good chuckle on your explosion (sorry - lol)because I almost had the same thing happen to me luckily I slowly removed the cap and was able to burp it along before opening it completely. When I checked all the rest of my plastic bottles I found that the necks of some were stretched out and the bottoms quite rounded so I had to put them into my secondary carboy to get rid of a bit of the carbonation.
